Loaded Fauxtato Skins

The big game is coming soon (aka the Superbowl for all my non-American and non-sports fan followers) which usually means parties full of chips, dips and other high carb snacks.  While I'm trying to occasionally treat myself and enjoy certain days like that without worrying about counting calories or carbs, I know not everyone allows themselves a free day and want to keep up with their ketogenic lifestyle 365 days a year.  Enter these fauxtato skins.  Potato skins are probably one of the most popular appetizers in America (don't quote me on that, I did exactly zero research) and I thought I could re-create that comfort food with far fewer carbs.  These were inhaled pretty much immediately after making them, so I'm sure even those not eating low carb would enjoy them as well I began by gathering all the necessary ingredients shown above and pre-heating my oven to 375°F.  You can use fresh cauliflower if you'd like, but I find it so much easier to use frozen in terms of prep time. Hasselback Zucchini

I hope everyone in the US enjoyed their Thanksgiving and are ready for the holiday season.  This is the time of year that can be tricky to stick to a low carb way of eating, but I know with all the resources out there on the internet you'll be able to succeed.  I've often thought about posting a round-up of my favorite low carb blogs I've bookmarked over the last two years, but I'm not sure if my readers would be interested in that - please let me know if that's something you'd like to see in the comments!  Today's recipe would be a great easy snack or even a lowkey appetizer or Superbowl party-appropriate dish.  I love how simple it is to make yet how delicious and cheesy it is when it's done. Caramelized Chorizo Dip

Now that my beloved Blackhawks have won the Stanley Cup, my sports focus is once again on the NFL and waiting for the Bears season (and Fantasy Football) to start.  Something about football reminds me of appetizers and snacks that are filling for the duration of the game.  While there are still a few months until the Monsters of the Midway take the field again, I thought I'd bring you an idea for an easy, delicious dip that will score a touchdown with all of your family and friends. I began by gathering my ingredients and pre-heating the oven to 350°F. First I sliced the yellow onion in half lengthwise and then made thin half-moon slices from each half.  Although this looks like a giant pile of onions, they will shrink significantly during the caramelization process. Cauli Tots

Many people who begin a low carb lifestyle attempt to re-create their favorite high carb foods with low carb replacements.  Bread, pasta and desserts are most commonly turned into mini science experiments in the kitchen as cooks try to replicate their favorite flavors in a healthier way.  Today I wanted to attempt to replace tater tots with a keto-friendly alternative: cauliflower.  Admittedly, these are not going to have exactly the same crunch as tater tots do, but these are a really great option when looking for a replacement for that style of potatoes. I began by pre-heating my oven to 375°F and gathering the ingredients shown above. First I finely minced the yellow onion into small pieces.  Since these will be folded into the cauli tots, you don't want them to overwhelm the tots, so the smaller they are cut the better. Sriracha Chicken Tenders

Spicy foods are some of my favorite foods; the more heat, the better, in my opinion.  I've become a kind of connoisseur of the hot sauce aisle at the grocery store after trying so many different brands and styles of hot sauce.  My personal favorite for a long time now has been sriracha as many other brands of hot sauce (like Frank's) just do not make food hot enough for me.  There's only been one instance of regret on my quest to find the perfect hot sauce: I tried Dave's Insanity Sauce once and used way too much, causing immediate tears and sweating and the inability to finish my eggs that morning.  Sriracha is the perfect amount of heat and goes well with so many different meals, including these delicious keto-friendly chicken tenders. Turkey Zucchini Poppers

Spring is here!  (Allegedly, at least... it's 35° here today and it just snowed on Friday...)  Warmer weather usually means more parties and a few holidays where guests like to bring a dish or two to the meal.  Appetizers are the usual go-to dish to bring, and today's turkey zucchini poppers will please everyone at any party.  These hearty bites are bursting with flavor and vegetables (don't tell the kids!) while still being a delicious low carb option.  The other guests will devour these poppers while the leftovers, if you're lucky to have some, make a great lunch or snack the next day. As always I started by gathering my ingredients for the dish.  Lots of flavor doesn't mean you need a laundry list of ingredients - simple is usually best. Spicy Kielbasa Dip

With the Superbowl coming up, I wanted to create an easy, keto-friendly dip you can bring to a party without anyone suspecting it's low carb, high fat.  This kielbasa dip is wonderful with cucumbers, bell pepper slices and celery but you could also bring crackers or crostini slices for your non-low carb friends and it would be equally delicious.  If you are like me and already waiting for next season to start, this dip will bring some comfort and satisfaction to your Superbowl celebration.  The best part is that it takes about 5 minutes to put together and has minimal ingredients, making this a touchdown of a recipe. I gathered my ingredients and pre-heated my oven to 375°F.  It is important to purchase fully cooked smoked kielbasa for this recipe.  Alternatively, you could use fully cooked Italian sausage links, too, but I prefer the flavor of Polish kielbasa in this recipe. Spinach and Artichoke Mini Muffins

I'm glad to be back to regular posting and apologize for my short hiatus.  I went home for two weeks over Christmas to spend time with family and friends.  It had been a year since I had been home, as I think I may have previously mentioned, and it was just so great to be back.  In the weeks leading up to my vacation I had made some extra recipes to post, but to be honest they don't live up to the standards I have set for myself and I didn't want to post mediocre food for you.  But now I am back and I hope you're ready for a delicious new recipe! Ranch Mushrooms
