Welcome to Butter Is Not a Carb!  My name is Alison and I began this project as a way to provide delicious, low carb recipes to others while documenting my own weight loss journey.  I’ve wanted to blog for many years, but never felt I had a sustainable topic worthy of an entire blog until now.   My hope is to be able to meet and inspire others who are also losing weight or simply looking for new recipe ideas, and to consistently publish content that my readers will enjoy.

Since beginning in March of 2014, I have done an incredible amount of research on health and nutrition.  I’ve essentially had to re-learn how to make and eat food, but I’ve enjoyed the process.   I am currently living a ketogenic lifestyle, which I will explain in greater detail in an early post.  Essentially, I eat low carb, high fat, and moderate protein, so the meals I will be posting will follow those guidelines, but my goal is to have anyone enjoy them, even if they do not have the same dietary restrictions.  My decision to follow a ketogenic lifestyle stems from having PCOS, or polycystic ovary syndrome.  I may talk about it more at a later date; if you’re curious for immediate information, this website lays out the basics pretty well.

Early in the process of creating this blog, I shifted the focus away from “me” towards providing my readers with delicious, low-maintenance low carb recipes for them to enjoy.   I have grown to love cooking over the last few years, especially once I moved out and have lived on my own, and I hope others will experiment with and enjoy the recipes I share.  I have many wonderful low carb blogs bookmarked, but often I find the authors are mostly mothers with a large family to feed.  While their food is delicious, even when I cut down the recipes I have too many leftovers and end up wasting food, therefore wasting money.   When possible, I’d like to be able to provide low carb, low maintenance ideas that are perfect for 1 or 2 people and that can be easily multiplied to serve a larger crowd.

    I am so impressed with your website! The photos are bright, clear and of excellent quality and really help inform how to follow the recipes. The Creamy Brussels Sprouts Bake is the best sprouts recipe I have ever made, absolutely delicious! I also love the egg-based muffins and tuna melts. Every recipe I have tried turns out great, which is more than I can say for recipes from professionally published cookbook recipes I have tried.

    These recipes look amazing. You sound like a pretty tough person! Do you have any suggestions about keto rash or about athletic performance in keto? I’ve been using this diet for about 3 months but feel I’ve hit a few of the common pitfalls–same foods all the time (almond is my middle name), obsessing about BOHB in my blood…etc. Thanks so much!

    • I’ve never heard of keto rash, George! I understand the same food pitfall, I run into that a lot myself even. I try to make one interesting thing each week and then keep it pretty simple otherwise. Our family has a joke that every recipe begins with, “Take a stick of butter, add blank.” It is nice to eat healthy, feel healthy, and be able to enjoy some butter! Please keep blogging. 🙂

    I just wanted to let you know that I found your blog two days ago, have already read all of it – and made two recipes. Thank you so much for all the time and effort you have put in. I made the tuna casserole tonight (but didn’t have tuna – used canned chicken instead) and it was awesome. It was all I could do not to eat it all. I have it portioned out in the fridge for lunches this week. I have many more bookmarked to try.

    If you had a cookbook I would buy it.

    HI Alison, I stumbled upon your website searching for low carb recipes. The husband and I are just starting on our weight loss/life style change journey and I also have pcos. Thank you for such amazing recipes we can’t wait to start playing and experimenting with them. We’ve slowly started to make small changes but kicking sugar is going to be difficult. I’m a home baker so business that will be a challenge. Combined we have a couple hundred pounds to loose wish us luck!
    Oh, and congratulations on your journey you’ve absolutely inspired us.

    • Hi Diana! I’m so glad you found my website. I know how difficult it can be – the most important thing is to take it one day at a time. Also, try to remember that this is a journey, not a quick fix. It’s okay to enjoy a non-low carb meal from time to time, if you want. Life is about a healthy balance, not forbidding yourself from living every once in a while, if that makes sense. I promise after 2-3 weeks you won’t crave sugar anymore, it’s kind of amazing how your body adjusts after just a short amount of time. I know it feels like you’re standing at the bottom of an insurmountable mountain, but you will be so glad a month, 6 months, a year from now that you started. Good luck!
