The Best Keto Strawberry Mousse

My biggest problem without keto isn’t dessert, it’s the texture. Sure, you can get decently sweet cookies, but sometimes I just miss the velvety texture of custards and puddings. And if you’re in the same boat as me, then this recipe is perfect for you. Our keto strawberry mousse is a super easy, weeknight treat that you can quickly make before work and enjoy when you’re home.
Ingredients
- 1 sachet of sugar-free strawberry jello
- 1 cup boiling water
- 1 cup heavy cream
- Chopped peanuts (for topping)
How to make a keto strawberry mousse
First, grab a heatproof jug and pour in the contents of your jello sachet. Add some boiling water and give it a good stir until the jello has dissolved completely. Let it cool down to a lukewarm, liquid consistency.
While you’re waiting for the jello to cool, grab a large mixing bowl and add some heavy cream. Using a hand mixer with a whisk attachment, give the cream a good whip until it’s looking all frothy and fluffy. Then, pour in the cooled jello and keep whipping for up to 5 minutes. You’ll know it’s ready when it’s thick and fluffy.
Now it’s time to assemble your mousse! Simply take your glass and spoon the mixture. Once your mousse is in the glass, all you need to do is allow it to set in the fridge for at least 2 hours but I like to make the recipe in the morning and leave it to set all day.
Once they’re set, take them out and top each one with a sprinkle of chopped peanuts, if you want. And voila! Your keto strawberry mousse is ready to be devoured. Enjoy!

Not only can you make this recipe in advance, but that’s actually my favorite way to enjoy it. I hate the idea of waiting to enjoy my dessert so I like to make it in the morning before work and tuck in as soon as I get home!

Ingredients
- 1 sachet of sugar-free strawberry jello
- 1 cup boiling water
- 1 cup heavy cream

Instructions
- Place the contents of the jello sachet into a heatproof jug, add the boiling water, and stir until the jello has dissolved.
- Set aside and allow to cool until it is lukewarm to room temperature and still liquid.
- Place the cream into a large mixing bowl and whip using a hand mixer with the whisk attachment. Once the cream looks frothy, add the cooled jello. Whip for around 3-5 minutes until thick and fluffy.
- Spoon the mixture into 4 serving glasses.
- Place in the fridge for 2 hours to set.
- Before serving, top each dessert with chopped pistachios, if desired, then enjoy!
